My 5 Easy Veggie Dishes

Hi lovelies! 

Hope you've enjoyed last week's detox breakfast recipes and feeling strong after that week of nourishing dishes. 

This week, I've been sharing and posting easy veggie dishes on our instastory to inspire and encourage more of you to #eatyourveggies. 

There's no excuse with these quick and easy recipes. Most of the dishes took me only 5-10 minutes to put up! These dishes can be side dishes, snacks or the base of a main meal. 

Easy Veggie Dish #1: Roasted Brussel Sprouts

⏰ 15 minutes

 Directions: 

1. Pre-heat oven at 200C. 

2. Mix brussel sprouts in olive oil and garlic. 

3. Bake in oven for 15 minutes. Season with pink himalayan salt before serving. 

 

Easy Veggie Dish #2: Mint Yoghurt Cucumber Salad 

⏰ 5 minutes

Directions: 

1. Mix in all ingredients and enjoy! 

Easy Veggie Dish #3: Sweet Potato and Carrot Crisps

⏰ 25 minutes

Directions: 

1. Pre-heat oven at 200C.

2. Place sweet potato and carrot slices onto baking tray evenly and sprinkle oil and salt over them. 

3. Bake for 15 minutes, turn over crisps to ensure they are evenly baked on both sides, and bake for another 10 minutes. 

3. Serve and enjoy! 

Easy Veggie Dish #4: Vegan Basil Zoodles

⏰ 5 minutes

Directions: 

1. Spiralize zucchini to your desired width. (Use vegetable slicer if you do not have a spiralizer) 

2. Mix in basil herb dressing into zucchini noodles, and serve with sprinkles of almonds. 

Easy Veggie Dish #5: Steamed Broccoli and Guacamole Dip 

⏰ 10 minutes

Directions: 

1. Steam broccoli for 5 minutes or till it turns dark green. 

2. Mash up an avocado and mix in onion, coriander and salt. 

3. Serve and enjoy! 

 

There you go, my 5 easy veggie dish recipes. Simple ingredients (whole food), nourishing and so so incredibly easy and they take no time at all! Hope this will inspire you to cook, have fun in the kitchen and enjoy eating your greens.
